Keto Broccoli Cheddar Cheese Soup Recipe
- 2 Tbs butter
- 1 tsp minced garlic
- 1/2 cup diced onion
- 8 cups broccoli florets
- 6 cups chicken broth
- 1/2 cup cream
- 2 cups cheddar cheese
- Salt to taste
- Melt butter in soup pot and add garlic and onion.
- Saute until translucent.
- Add broccoli florets and chicken broth and simmer until broccoli is soft enough to easily poke with a fork.
- Ladle the soup into a blender and blend.
- Pour back into the soup pot and add cream and cheese and salt if needed. Voila!
