Keto German Pancakes Recipe – Keto Mamas

Everyone loves good German Pancakes, and you can still enjoy them on the keto diet. Topped with berries and whipped cream, these keto German pancakes (made with almond flour) are easy to whip up for a special occasion breakfast, dessert or anytime!  Looking for breakfast ideas that are grain free, gluten free, low carb, and sugar free?  Keto German Pancakes are the perfect answer!

Keto German Pancakes Recipe

  • Servings: 6-8

Set oven to 425 degrees

Ingredients

German Pancake

  • 6 large eggs
  • 2 cups almond flour
  • 3/4 cup unsweetened almond milk
  • 1/4 cup cream
  • 1/2 tsp salt
  • 1 stick butter (1/2 cup)

Berry Topping

  • 2 cups berries
  • 1/4 cup xylitol (or sweeten to taste with preferred sweetener)

Whipped Cream

  • 1 cup heavy cream
  • 1/4 cup xylitol
  • 1 tsp vanilla

Directions

  1. Preheat oven to 425 degrees.
  2. When oven is heated, put butter in a 9x13 casserole dish and place in the oven to melt.
  3. Meanwhile, mix eggs, almond flour, almond milk, cream and salt in the blender.
  4. When butter is melted, sizzling but not burned, carefully put out the oven rack and pour the egg mixture into the casserole dish.
  5. Bake 15 minutes or until pancake is puffed up and lightly browned. It will flatten slightly after it comes out of the oven.
  6. While the pancake is baking, sweeten the berries with xylitol and mix together in a bowl. If using frozen berries, heat up berries to thaw them.
  7. Whip the heavy cream, xylitol and vanilla in a bowl with an electric hand mixer until desired consistency.
  8. Cut the puffed pancake into 6 or 8 squares and serve on individual plates topped with berry topping and whipped cream.

*Note: To save money, I buy xylitol in the bulk bins at Good Earth. I also buy frozen berries in large bags from Costco because it is more economical than buying fresh berries. Costco also sells large cartons of heavy cream which we go through quickly at our house.

Keto Chocolate Smoothie

This Keto Chocolate Smoothie is a quick food option for breakfast or anytime.  This recipe is packed full of healthy and nutritious ingedients, including spinach, cocoa powder coconut milk, berries and whole cream.  You will not only enjoy the chocolate flavor but how healthy it feels for your body.

Keto Chocolate Smoothie

  • Servings: 1

Ingredients

  • 2 cups fresh spinach leaves
  • 1/4 cup of berries (optional)
  • 1/2 of a freshly ripe avocado (if it is over-ripe it will make the shake bitter)
  • 1 cup coconut milk
  • 1/2 cup water
  • 1 cup ice
  • 2 tsp liquid vanilla stevia or sweeten to taste
  • 2 Tbs cocoa powder
  • Pinch of sea salt
  • 1 to 2 Tbs cream (optional)

Directions

  1. Add ingredients and blend until smooth.
Note: You can experiment with adding different protein powders too, just watch the carbs and amount of protein so that you keep your daily macros to less than 20% protein and 5% carbs.

Keto Mock Omelet Recipe – Keto Mamas – Good for you!

Keto Mock Omelet - Sunny-side up eggs garnished with avocado, tomatoes, green onion and bacon bits

Ok lets face it, eggs are the universal food for all meals, all seasons and all holidays.  When all else fails, make eggs! I have made plenty of actual omelets, but if you don’t want to oxygenate the yolks, just make sunny-side up eggs and add your choice of omelet toppings. This keto mock omelet recipe is low carb, super easy, healthy and delicious!

Keto Mock Omelet Recipe

  • Servings: 1

Ingredients

  • Butter
  • Eggs
  • Salt
  • Cheese if desired
  • Any combination of veggies: spinach, chard, kale, broccoli, onions/green onions, tomatoes, mushrooms, and fresh herbs like basil, cilantro, etc.
  • Avocados
  • Crispy bacon crumbles (optional)

Directions

  1. Saute vegetables, except avocado, in butter or favorite healthy oil, adding the delicate veggies like green onions, tomatoes and fresh herbs last minute to warm them through.
  2. Crack eggs into the pan leaving yolks in-tact and give each egg a shake of salt and add cheese on top of eggs if desired.
  3. When egg whites turn opaque, take the pan off the burner and put the pan under the broiler, leaving the handle sticking out of the oven, to finish cooking the tops of the eggs and melt the cheese.
  4. Serve the eggs by placing individual servings on a plate and top with the sautéed veggies, fresh avocado slices and bacon crumbles.

Keto Yogurt with Nuts and Berries, is one of my families favorites for breakfast, a snack or a treat which gives you the satisfaction of having just eaten something sweet, slightly tangy and delicious while still leaving you feeling light and healthy.   Enjoy it any time of the day or as an evening dessert.  Your whole family will love it!

Mom’s we know how hectic life can get and the value of quick and easy go-to-meaIs.  Whipping together a quality organic yogurt with berries, nuts and adding a sweetener is super easy and convenient for a family on the go.  Yogurt packs well when you need to make a treat for the road and stores well in the refrigerator.

Finding the best yogurt requires you to know what you are buying.  Read the labels.  Here are some helpful suggestions.  Look for organic, plain, sugar free, high-fat and low carb yogurts.   You may have to go with a nonfat, plain yogurt to find one with low carbohydrates.   However, just be prepared the healthier yogurts can get expensive.  We like the Costco – Kirkland Greek Yogurt and even though we would prefer a yogurt, which is high in fat, this yogurt only contains 7g of carbohydrates.  You can always add an organic whole cream to your yogurt to increase the fat content.  Select your yogurt carefully and check with your health-food stores to ensure that you are purchasing a high-quality yogurt.

The cultures or probiotics of a quality yogurt may help your digestive tract.  However, not all yogurts have the same benefits.  The basic cultures or probiotics used to make yogurt are Lactobacillus bulgaricus, Streptococcus thermophilus, Lactobacillus acidophilus, Bifidus, and Lactobacillus casei. Additional probiotics are often added.  

Use full-fat yogurt to feed the brain.  Sweetened with stevia, this yogurt is low carb and sugar free and if you keep your berries to the proportions shown in the recipe your blood sugars will not spike after eating this delicious treat, thus allowing you to stay in ketosis.

Ingredients

  • 1/2 cup unsweetened full-fat Greek yogurt
  • Stevia to taste
  • 1/4 cup frozen or fresh berries
  • Handful of roasted nuts

Variation

Buy no fat Greek yogurt and just add a tablespoon of cream.

Directions

  1. Dish yogurt into your favorite bowl.
  2. Sweeten with stevia.
  3. Top with fresh berries and nuts.
