Keto Taco Salad

A taco salad is an easy go to meal for lunch or dinner and you can still enjoy it on the keto diet. With dried and fresh herbs and spices, avocado oil and lime juice, this Keto Taco Salad recipe is packed with a healthy punch.  It is grain free, gluten free, low carb, and sugar free.  You will love this homemade Keto Taco Salad.

Keto Taco Salad Recipe

  • Servings: 6
  • Difficulty: easy
  • Print

For Seasoned Meat:
  • 1 lb. cooked ground beef or shredded chicken (for quick and easy, use drained, canned chicken or beef)
  • 1 small diced onion
  • 1 tsp minced garlic or 1/2 tsp garlic powder
  • 1-2 Tbs avocado oil to the pan if using chicken or pre-cooked beef. If cooking raw beef, the fat from the meat with be enough.
Use a seasoned taco mix or for a healthier option use the following:
  • 1 and 1/2 tsp ground cumin
  • 2 tsp chili powder (more if you want spicier)
  • 1/4 tsp dried oregano
  • 1/2 tsp paprika
  • 2 tsp vinegar
  • 1/8 tsp stevia/erythritol blend
  • 1 tsp pink Himalayan salt or sea salt
  • 1/4-1/2 tsp pepper
  • Optional: 1/8 tsp red pepper flakes for added kick
For salad:
  • Chopped lettuce
  • Diced tomatoes
  • Sliced olives
For toppings:
  • Cheese
  • Sour cream (or creamy dressing below)
  • Salsa (Click here for my homemade, fresh salsa recipe)
For vinaigrette dressing mix:
  • 3 Tbs lime juice
  • 1/3 cup olive oil or avocado oil
  • 2 Tbs chopped fresh cilantro
  • 1/2 tsp sea salt
  • 1/4 tsp pepper
For quick creamy dressing mix:
  • 1/4 cup avocado mayo
  • 1/2 cup sour cream
  • 1/3 cup milk (or enough to make it pour nicely)
  • 1 Tbs ranch seasoning mix
  • 1 Tbs taco seasoning mix

Directions

  1. Saute first 11 ingredients together in a skillet over medium heat until onions are cooked (and meat is cooked through if using raw).
  2. For Salad, combine lettuce, tomatoes, olives and fresh cilantro.
  3. Top salad with seasoned sauted meat.
  4. Top with cheese, sour cream, fresh salsa and vinaigrette or creamy dressing.
*Note: This is pretty much the same as a typical taco salad, minus the tortilla chips, rice, beans, corn and the bad oils. The store-bought seasoning mixes provide a quick option, however seasoning it yourself is healthier. I will often order a taco salad at a restaurant and just tell them to hold the rice, beans, corn and tortilla or tortilla chips to make it keto.

Keto Italian Salad Dressing Recipe

  • Servings: 1/2 cup
  • Difficulty: easy
  • Print

Ingredients

  • 1 Tbs lemon juice
  • 1 tsp Dijon mustard
  • 1/2 tsp garlic powder or 2 minced cloves of fresh garlic
  • 1/2 tsp onion powder or 1 and a half tsp minced fresh onion
  • 1/2 tsp dried basil or 1 and a 1/2 tsp minced fresh basil
  • 1/8 tsp dried oregano or 3/4 tsp minced fresh oregano
  • 1/8 tsp crushed dried thyme or 3/4 tsp minced fresh thyme
  • 1/8 tsp crushed dried rosemary or 3/4 tsp minced fresh rosemary
  • 1/2 tsp pink Himalayan salt or sea salt
  • 1/4-1/2 tsp pepper
  • Optional: shake in a few red pepper flakes for a kick

Directions

  1. Put all ingredients in a mason jar with a lid and shake vigorously.
  2. Pour on salad immediately before the oil and vinegar separate.
  3. Toss salad and enjoy right away.
*Note: Can store in the fridge for a few weeks if using dried herbs. Use right away if using fresh herbs. Allow the olive oil to reach room temperature again after taking out of the fridge, since olive oil will solidify in cold temperatures. For the salad, I use 2 heads of chopped romaine lettuce, a couple diced tomatoes, 1/3 cup coarsely chopped onion, a couple handfuls of olives and lots of fresh parmesan cheese.
