This keto broccoli cheddar cheese soup recipe is one of my favorites for a good low carb comfort soup.  Who doesn’t like a creamy, cheesy and flavorful bowl of hot keto broccoli cheddar cheese soup, this is a must try! The result will be your family will love it! This keto broccoli cheddar cheese soup is perfect with a fresh salad, or as a side with your choice of a healthy main dish.  Its flavors compliment almost any meal.  

Keto Broccoli Cheddar Cheese Soup Recipe

  • Servings: 6

Ingredients

  • 2 Tbs butter
  • 1 tsp minced garlic
  • 1/2 cup diced onion
  • 8 cups broccoli florets
  • 6 cups chicken broth
  • 1/2 cup cream
  • 2 cups cheddar cheese
  • Salt to taste

Directions

  1. Melt butter in soup pot and add garlic and onion.
  2. Saute until translucent.
  3. Add broccoli florets and chicken broth and simmer until broccoli is soft enough to easily poke with a fork.
  4. Ladle the soup into a blender and blend.
  5. Pour back into the soup pot and add cream and cheese and salt if needed. Voila!

Keto Thai Soup Recipe – Keto Mamas – Good for you!

Keto Thai Soup - Keto Coconut Lemon Thai Soup

This Keto Thai soup recipe is fast, easy and great for a family that is always on the go.  Make enough for left-overs and you have a second quick meal for another time.

Try this recipe and you will find a delicious blend of subtle flavors that compliment each other.  The coconut milk provides a smooth texture,  the lemon zest adds zing, while the curry paste balances the soup and brings a slight spice to the back of the palate.  The cilantro leaves add freshness, while the mushrooms, chicken and spinach, give substance to the soup and something to chew on. 

You have to try this keto Thai soup, everyone loves it at our house! Betcha can’t have just one bowl!

Keto Thai Soup Recipe

  • Servings: 6

Ingredients

  • 2 Tbs coconut oil
  • 1 Tbs red or yellow curry paste (or any you like)
  • 2 tsp minced garlic
  • 5 to 7 sliced mushrooms
  • 3 cans full fat coconut milk
  • 6 cups chicken broth
  • 1 to 2 cans chicken
  • A couple handfuls of fresh spinach
  • 1 to 2 fresh diced tomatoes
  • 2 sliced green onions
  • A handful of fresh cilantro leaves
  • Zest of one lemon
  • Salt to taste
  • Sweeten to taste with a few drops of liquid stevia
  • Fresh squeezed lime to taste

Directions

  1. Saute the first 4 ingredients in your soup pot until mushrooms are soft.
  2. Add coconut milk, broth, chicken, spinach, tomatoes, green onions, cilantro, salt, stevia and lime juice.
  3. Mix and heat through.
  4. Serve immediately.

Variations

This recipe can be made with whatever vegetables you have on hand. I have used cabbage, peas or pea pods, bean sprouts, lemon grass, etc. I add the lemon zest because I almost never have lemon grass on hand, but since doing keto, I almost always have lemons.  Also, you can add more curry paste for more of a kick. I use whatever chicken I have on hand.  The canned chicken just makes this soup super easy.  You could try shrimp or crab instead of chicken.

This keto bone broth recipe is so easy and super good for you!  We drink this for breakfast and when we don’t feel well.

Maybe grandma did not fully understand all the health benefits of a good bone broth, but for generations, people have been enjoying the many wonderful health promoting aspects of bone broth.

Keto Bone Broth Recipe

  • Servings: 4

Ingredients

  • Roasted animal bones*
  • Water
  • 2 Tbs. apple cider vinegar
  • A couple cloves of garlic or 2 tsps minced garlic
  • One onion
  • Salt to taste

Directions

  1. Put roasted bones in crockpot, cover with water, add apple cider vinegar and cook on high for 24 hours, watching water level and adding more water to keep bones covered.
  2. Add garlic, onion and perhaps a carrot, celery or bay leaf, etc. and cook another 12 to 24 hours, still checking water levels to keep bones covered with water.
  3. Strain off bones and veggies and throw them away. Add salt to the broth and enjoy!

*I use the left-over parts of a roasted chicken after we have eaten the meat or I roast beef bones myself by putting them in a casserole dish, covering with foil (this keeps my oven clean because it will spit when heated) and cooking at 425 degrees for 40 mins.
